Corn Chowder
10 Potatoes
2 cans chicken broth
2 cans evaporated milk
2 cans corn- drained
1 tbsp. butter
1 tsp. parsley flakes
salt and pepper to taste
optional - instant mashed potatoes(use to make desired thickness)

Peel potatoes and put into a large pot with water covering. bring to a boil. let boil till tender, drain. Add chicken broth, evaporated milk and butter, mash potatoes slightly, till it has a kind of lumpy consistancy. Add instant mashed potatoe flakes if to watery, should be thick but not to thick, add corn, parsley and season to taste. Serve with corn bread or a hearty bread. Makes about 10-12 servings. This recipe can be adjusted easily for less servings use less potatoes and liquids.It can also be made low fat/calories by using no butter, nonfat milk and low sodium broth. this is a very versitile recipe thats quick easy and cheap! Freezes well, just pour into a zip lock baggie. Hope you enjoy
